Plant sterols are natural chemicals which resemble the shape and size of cholesterol. These sterols are absorbed from the intestines into the bloodstream to carry out their functions. Some food sources are fortified with plant sterols so that the consumer can reap the benefits of the chemicals. These include yoghurt, mini yoghurt drinks, fat spreads and milk. other natural sources rich in plant sterols include fruits and vegetables, vegetable oils, legumes, nuts, seeds and fish. There is evidence to suggest that consuming 1.5g - 3.0g of Plant Sterols can lower your cholesterol levels by 10% in just three weeks. The everyday diet contains around 300mg of Plant Sterols each day, although vegetarian diets can contain up to twice as much on average.
The primary role of Plant Sterols is to reduce cholesterol levels in the body. Some scientists believe that Plant Sterols are the most efficient type of 'superfood' to lower cholesterol levels. Cholesterol is either 'good' (HDL) or 'bad' (LDL) and Plant Sterols aim to reduce the number of bad cholesterol molecules. Once consumed, cholesterol binds to bile acids in the gut. Because plant sterols imitate the shape and size of cholesterol, the natural plant chemicals compete with cholesterol for the bile acid-binding sites, reducing cholesterol entry into the bloodstream. This means that more cholesterol lost in the faeces.
